WINERY

The winery opened in September 2018. The building is based on natural elements using bioconstruction and taking advantage of the sloping ground to distribute the structure across two floors. There is an underground floor which allows a year-round constant interior temperature in which the wines are produced and stored and an upper floor which is used as a sales room and wine-tasting centre.

WINERY

We have gone back to storing wines in concrete after their time in the barrel, just as our grandparents did. We have adopted uninoculated native malolactic fermentation, the use of whole grape clusters in fermentation and minimal handling because we believe that in this way we better respect the essence of our grapes.
We only make wine from our own vineyards, meaning that production is limited and ensuring that our wines are of the highest quality.

PHILOSOFY

Our wine-making philosophy is based on having maximum respect for the grape, with a light, natural vinification style, which only uses organic grapes. This philosophy of seeking out authenticity, rejecting industrial processes and respecting the environment has placed us at the cutting edge where innovation is concerned. It may seem contradictory; nevertheless, recovering age-old vineyards and wine-making culture, passed down from generation to generation is what allows us to continue to break new ground in the search for excellence. Wine production takes place within the strictest ecological controls, paying special attention to the importance of ensuring that the grape arrives at the winery in optimal condition in terms of quality and hygiene. Both these factors allow us to reduce process contamination to an absolute minimum.
